Gougères Recipe

Ingredients:

  • 1 cup water
  • 1 stick unsalted butter (4 ounces)
  • 1/2 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 4 large eggs
  • 1 cup freshly grated Gruyère cheese (about 4 ounces)
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Preheat your oven to 375°F.
  2. In a medium saucepan, bring the water, butter, and salt to a boil over medium-high heat.
  3. Reduce the heat to medium-low and add the flour all at once, stirring vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the saucepan.
  4. Remove from heat and cool for 2 to 3 minutes.
  5. Add the eggs, one at a time, beating well after each addition, until the mixture is thick and shiny.
  6. Add the Gruyère cheese, nutmeg, and black pepper, stirring until well combined.
  7. Spoon the mixture into a piping bag fitted with a 1/2-inch plain tip, or use a tablespoon to drop the dough in mounds onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 20 to 25 minutes, or until they are puffed and golden brown.
  9. Serve hot or warm.
