Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 egg yolk
  • 2 tbsp ice water
  • 1 1/2 cups heavy cream
  • 12 oz bittersweet chocolate, finely chopped
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Whipped cream and berries for garnish

Instructions

  1. In a food processor, pulse together the flour, cocoa powder, sugar, and salt until well combined.
  2. Add the chilled and cubed butter to the food processor and pulse until the mixture resembles fine sand.
  3. In a small bowl, whisk together the egg yolk and ice water. Gradually add to the food processor and pulse until the dough comes together in a ball.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 350°F.
  6. Roll out the dough on a floured surface and press into a 9-inch tart pan. Trim the edges and prick the bottom with a fork.
  7. Bake the crust for 15-20 minutes, until firm. Let cool on a wire rack.
  8. In a medium saucepan, heat the heavy cream until just simmering. Remove from heat and add the finely chopped chocolate, unsalted butter, vanilla extract, and salt. Whisk until smooth and shiny.
  9. Pour the chocolate mixture into the cooled crust and smooth with a spatula. Chill in the refrigerator for at least 2 hours, or until set.
  10. Serve the chocolate tart chilled, topped with whipped cream and fresh berries.
