Gourmet Chocolate Tart
Ingredients
- 1 1/2 cups all-purpose flour
- 1/3 cup cocoa powder
- 1/4 cup sugar
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 egg yolk
- 2 tbsp ice water
- 1 1/2 cups heavy cream

Instructions
- In a food processor, pulse together the flour, cocoa powder, sugar, and salt until well combined.
- Add the chilled and cubed butter to the food processor and pulse until the mixture resembles fine sand.
- In a small bowl, whisk together the egg yolk and ice water. Gradually add to the food processor and pulse until the dough comes together in a ball.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F.
- Roll out the dough on a floured surface and press into a 9-inch tart pan. Trim the edges and prick the bottom with a fork.
- Bake the crust for 15-20 minutes, until firm. Let cool on a wire rack.
- In a medium saucepan, heat the heavy cream until just simmering. Remove from heat and add the finely chopped chocolate, unsalted butter, vanilla extract, and salt. Whisk until smooth and shiny.
- Pour the chocolate mixture into the cooled crust and smooth with a spatula. Chill in the refrigerator for at least 2 hours, or until set.
- Serve the chocolate tart chilled, topped with whipped cream and fresh berries.
