Gourmet Vegetable Garden
Ingredients:
- 1 cup cherry tomatoes
- 1 medium zucchini, sliced into rounds
- 1 medium yellow squash, sliced into rounds
- 1 red bell pepper, seeded and sliced into strips
- 1 yellow bell pepper, seeded and sliced into strips
- 1 small red onion, sliced into rings
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F.
- Take a mixing bowl and add cherry tomatoes, zucchini, yellow squash, red bell pepper, yellow bell pepper, and red onion to it.
- Add the olive oil, balsamic vinegar, garlic, thyme, oregano, salt and pepper to the mixing bowl. Mix everything so the vegetables are coated in the seasoning.
- Spray a baking sheet with cooking spray and spread out the vegetables evenly on it.
- Bake for 35-40 minutes, stirring every 15 minutes, until vegetables are tender and slightly charred.
Serving Suggestions:
This delicious gourmet vegetable garden is a perfect side dish to compliment a hearty meat-based meal. It works great with a grilled chicken breast, fish or steak.
