Grape Risotto Recipe

Ingredients:

  • 1 cup Arborio rice
  • 2 cups chicken or vegetable stock
  • 1 cup white wine
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup seedless grapes, halved
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large saucepan, bring the stock and wine to a simmer.
  2. In a separate saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the onions and garlic and sauté for 3 minutes or until the onions are translucent.
  3. Add the Arborio rice to the onion mixture, stirring constantly until coated and the edges of the rice become translucent, about 3 minutes.
  4. Add a ladleful of the simmering stock to the rice and stir constantly until the liquid is absorbed. Continue adding stock, one ladleful at a time, stirring constantly until absorbed before adding more. Cook until the rice is al dente, about 20-25 minutes.
  5. Stir in the remaining tablespoon of butter, grape halves, and Parmesan cheese. Season with salt and pepper to taste.
  6. Serve immediately and enjoy!
