Gravlax salmon, tomato salad


Gravlax Salmon Recipe

Ingredients:

  • 1 lb. salmon fillet, skin on
  • 1/4 cup sea salt
  • 1/4 cup granulated sugar
  • 1 tbsp. whole peppercorns
  • 1 bunch fresh dill, chopped
  • Zest of 1 lemon

Directions:

  1. Mix together the salt, sugar, peppercorns, dill, and lemon zest in a small bowl.
  2. Rinse the salmon fillet and pat dry with paper towels.
  3. Place a large sheet of plastic wrap on a flat surface and sprinkle half of the salt mixture on it.
  4. Place the salmon fillet, skin side down, on top of the salt mixture.
  5. Sprinkle the remaining salt mixture over the top of the salmon fillet.
  6. Wrap the plastic wrap tightly around the salmon, then wrap it again in aluminum foil.
  7. Place the salmon in a baking dish and weigh it down with a heavy object, such as a cast iron skillet.
  8. Refrigerate the salmon for at least 24 hours, or up to 48 hours for a stronger flavor.
  9. Remove the salmon from the foil and unwrap the plastic wrap.
  10. Rinse the salmon under cold running water, then pat dry with paper towels.
  11. Slice the salmon thinly with a sharp knife and serve.
