Gravlax Salmon Recipe
Ingredients:
- 1 lb. salmon fillet, skin on
- 1/4 cup sea salt
- 1/4 cup granulated sugar
- 1 tbsp. whole peppercorns
- 1 bunch fresh dill, chopped
- Zest of 1 lemon
Directions:
- Mix together the salt, sugar, peppercorns, dill, and lemon zest in a small bowl.
- Rinse the salmon fillet and pat dry with paper towels.
- Place a large sheet of plastic wrap on a flat surface and sprinkle half of the salt mixture on it.
- Place the salmon fillet, skin side down, on top of the salt mixture.
- Sprinkle the remaining salt mixture over the top of the salmon fillet.
- Wrap the plastic wrap tightly around the salmon, then wrap it again in aluminum foil.
- Place the salmon in a baking dish and weigh it down with a heavy object, such as a cast iron skillet.
- Refrigerate the salmon for at least 24 hours, or up to 48 hours for a stronger flavor.
- Remove the salmon from the foil and unwrap the plastic wrap.
- Rinse the salmon under cold running water, then pat dry with paper towels.
- Slice the salmon thinly with a sharp knife and serve.
