Ingredients:

  • 2 lbs of fresh cod fillets, skin on
  • 1/4 cup of kosher salt
  • 1/4 cup of granulated sugar
  • 1 tbsp of black peppercorns, crushed
  • 1 tbsp of coriander seeds, crushed
  • 1 tbsp of fennel seeds, crushed
  • 1/2 cup of fresh dill, chopped
  • 1 lime, zested

Directions:

  1. In a small bowl, mix together the kosher salt, sugar, peppercorns, coriander seeds, and fennel seeds.
  2. Spread half of the mixture onto the bottom of a glass or plastic container.
  3. Place the cod fillets on top of the seasoning mixture and cover with the remaining seasoning mixture.
  4. Sprinkle fresh dill and lime zest over the top of the fillets and place them in the refrigerator.
  5. Allow the cod fillets to cure for 24-36 hours, turning them once or twice during that time to ensure that they cure evenly.
  6. After the curing process, rinse the fillets thoroughly with cold water and pat them dry.
  7. Use a sharp knife to slice the cod fillets as thinly as possible.
  8. Serve the gravlax-style cod as an appetizer with crackers, baguette slices, or as a part of a festive charcuterie board.
