Green Asparagus and Radish Salad with Roasted Chickpeas
Ingredients:
- 1 bunch of green asparagus, trimmed and chopped into bite-sized pieces
- 1 bunch of radishes, thinly sliced
- 1 can of chickpeas, drained and rinsed
- 1 tablespoon of olive oil
- Sea salt and black pepper
- 1/4 cup of shaved parmesan cheese
- 1/4 cup of chopped fresh parsley
- 1/4 cup of lemon juice
- 1/4 cup of extra-virgin olive oil
Instructions:
- Preheat the oven to 400°F.
- In a mixing bowl, toss the chickpeas, olive oil, sea salt, and black pepper until well coated.
- Spread the chickpeas out on a baking sheet and roast in the oven for 15-20 minutes, or until crispy.
- While the chickpeas are roasting, prepare the asparagus and radish salad. In another bowl toss together asparagus, radishes, parmesan cheese, parsley, and lemon juice.
- Drizzle the extra-virgin olive oil over salad and mix together properly.
- Take roasted chickpeas out of the oven and cool for 3-4 minutes.
- Add the roasted chickpeas on the top of the salad.
- Season with the additional sea salt and freshly cracked black pepper as per taste.
- Enjoy!
