Green Gazpacho Recipe
Ingredients
- 2 cups chopped cucumber
- 1 avocado, pitted and chopped
- 1 green bell pepper, seeded and chopped
- 2 green onions, chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley leaves
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 2 cups cold water
- Salt and freshly ground black pepper, to taste
Instructions
- Place chopped cucumber, avocado, bell pepper, green onions, garlic, and parsley leaves into a blender. Pulse several times, scraping down the sides as needed, until the mixture is mostly smooth.
- Add fresh lime juice, olive oil, and cold water to the blender and blend for 1-2 minutes until the gazpacho is smooth and creamy.
- Taste and season with salt and freshly ground black pepper, to taste. If the gazpacho is too thick, add additional water until it reaches your desired consistency. Serve the gazpacho immediately or store in the fridge for up to 3-4 days.
