Grilled Eggplant Salad Recipe

Ingredients

  • 2 large eggplants
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1/4 cup chopped parsley
  • 1/4 cup chopped basil
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the eggplant into 1/2-inch thick slices and brush both sides with olive oil.
