Guinea Fowl and Morels Recipe
Ingredients
- 1 guinea fowl, cut into pieces
- 200g fresh morels, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cups of chicken broth
- 1/2 cup of white wine
- 2 tbsp of butter
- 2 tbsp of olive oil
- Salt and pepper
Instructions
- Season the guinea fowl pieces with salt and pepper.
- In a large pan, heat the olive oil over medium-high heat.
- Place the guinea fowl pieces in the pan and cook until browned on all sides. Remove from the pan and set aside.
- Add the butter to the same pan and let it melt.
- Add the chopped onion and minced garlic to the pan and cook until onion is softened.
- Add the sliced morels to the pan and cook for 5 minutes, until they release their liquid.
- Add the white wine to the pan and let it simmer until reduced by half, scraping the bottom of the pan to release any browned bits.
- Return the guinea fowl pieces to the pan and pour in the chicken broth.
- Bring the mixture to a simmer, then reduce the heat to low and let it cook for 30-40 minutes, or until the guinea fowl is cooked through and tender.
- Season with salt and pepper to taste.
Serve the delicious guinea fowl and morels hot as a main dish with your favorite sides.
