Guinea Fowl and Morels Recipe

Ingredients

  • 1 guinea fowl, cut into pieces
  • 200g fresh morels, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 cups of chicken broth
  • 1/2 cup of white wine
  • 2 tbsp of butter
  • 2 tbsp of olive oil
  • Salt and pepper

Instructions

  1. Season the guinea fowl pieces with salt and pepper.
  2. In a large pan, heat the olive oil over medium-high heat.
  3. Place the guinea fowl pieces in the pan and cook until browned on all sides. Remove from the pan and set aside.
  4. Add the butter to the same pan and let it melt.
  5. Add the chopped onion and minced garlic to the pan and cook until onion is softened.
  6. Add the sliced morels to the pan and cook for 5 minutes, until they release their liquid.
  7. Add the white wine to the pan and let it simmer until reduced by half, scraping the bottom of the pan to release any browned bits.
  8. Return the guinea fowl pieces to the pan and pour in the chicken broth.
  9. Bring the mixture to a simmer, then reduce the heat to low and let it cook for 30-40 minutes, or until the guinea fowl is cooked through and tender.
  10. Season with salt and pepper to taste.

Serve the delicious guinea fowl and morels hot as a main dish with your favorite sides.
