Haddock Goujonnettes

Ingredients:

  • 2 haddock fillets
  • 1 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup panko bread crumbs
  • Vegetable oil, for frying

Instructions:

  1. Cut the haddock fillets into long, thin strips.
  2. In a shallow bowl, combine the flour, smoked paprika, garlic powder, salt and black pepper.
  3. In a separate shallow bowl, beat the eggs.
  4. In another shallow bowl, place the panko bread crumbs.
  5. Dredge the haddock strips in the flour mixture, shaking off any excess.
  6. Dip the haddock in the beaten eggs, then coat the strips in the panko bread crumbs.
  7. In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
  8. Fry the haddock strips in the oil until golden brown and crispy, about 3-4 minutes per side.
  9. Drain the haddock on a paper towel-lined plate.
  10. Serve hot with lemon wedges, tartar sauce, and/or your favorite dipping sauce.
