Haddock Goujonnettes
Ingredients:
- 2 haddock fillets
- 1 cup all-purpose flour
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 1 cup panko bread crumbs
- Vegetable oil, for frying
Instructions:
- Cut the haddock fillets into long, thin strips.
- In a shallow bowl, combine the flour, smoked paprika, garlic powder, salt and black pepper.
- In a separate shallow bowl, beat the eggs.
- In another shallow bowl, place the panko bread crumbs.
- Dredge the haddock strips in the flour mixture, shaking off any excess.
- Dip the haddock in the beaten eggs, then coat the strips in the panko bread crumbs.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
- Fry the haddock strips in the oil until golden brown and crispy, about 3-4 minutes per side.
- Drain the haddock on a paper towel-lined plate.
- Serve hot with lemon wedges, tartar sauce, and/or your favorite dipping sauce.
