Hake en Papillote and Mashed Broccoli

Ingredients:

  • 2 Hake fillets (approx. 100g each)
  • 1/2 head of broccoli
  • 1/4 cup cherry tomatoes
  • 1/4 chopped red onion
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 200C/400F.
  2. Cut a large piece of baking paper or foil and fold it in half. Place vegetables and cherry tomatoes on one half of the paper and season with olive oil, garlic powder, paprika, salt and pepper. Mix well.
  3. Season the hake fillets with salt and pepper and place on top of the vegetables. Fold the paper over to make a sealed parcel.
