Hazelnut, Almond and Carrot Cake Recipe
Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon powder
- ½ tsp salt
- ¾ cup (unsalted) butter, at room temperature
- ¾ cup granulated sugar
- 2 large eggs
- 1 cup grated carrots
- ½ cup chopped hazelnuts
- ½ cup chopped almonds
- 1 tsp vanilla extract
- For the frosting:
- 1 package cream cheese, at room temperature
- 1 cup powdered sugar
- ½ cup melted white chocolate
- 3 tbsp. heavy whipping cream
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease a 9-inch (23 cm) cake tin with butter and dust it lightly with flour.
- In a medium-sized mixing bowl, whisk together the flour, baking soda, cinnamon and salt. Set aside.
- In a separate large mixing bowl, cream together the butter and sugar until light and fluffy using an electric mixer (or whisk manually). Add the eggs, one at a time, mixing well after each addition.
- Add in the grated carrots, chopped hazelnuts, chopped almonds, vanilla extract and mix well.
- Slowly fold in the dry ingredients mixture until everything is well combined.
- Transfer the batter to the prepared cake tin and smooth the top. Bake for 35-45 minutes or until a toothpick inserted in the center comes out clean.
