Homemade Squid Ink Ravioli Dough

Ingredients:

  • 2 cups of all-purpose flour
  • 3 large eggs
  • 1 tbsp squid ink
  • 1 tsp salt

Directions:

  1. Sift the flour onto a clean surface and make a well in the center
  2. In a small bowl, whisk the eggs and squid ink together
  3. Pour the egg mixture and salt into the well
  4. Using a fork, start stirring the ingredients together until a dough starts to form
  5. Once a dough is formed, knead it for 8-10 minutes until the dough is smooth and elastic. You should also see the distinctive black color from the squid ink throughout the dough.
  6. Wrap the dough in plastic wrap and let it rest for at least 30 minutes
  7. Use a pasta machine or rolling pin to roll out the dough to your desired thickness (about 1/16”)
  8. Use a ravioli cutter or cookie cutter to cut out shapes from the dough. To make raviolis, spoon a small amount of filling on one sheet of the dough, then lay another sheet of the dough over it. Press the edges together to seal.
  9. Boil the raviolis in salted boiling water for 3-4 minutes or until they float to the top
  10. Remove from water and serve with your desired sauce or toppings
