Honey, Butternut and Calvados Pancakes Recipe
Ingredients:
- 250g butternut squash, peeled and finely grated
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/4 cup milk
- 2 tbsp calvados (apple brandy)
- 2 tbsp honey
- 2 eggs
- 2 tbsp butter, melted
- Extra butter for frying
Instructions:

- Using a 1/4 cup measure, scoop the pancake mixture into the frying pan and cook for 2-3 minutes on each side, or until golden brown.
- Repeat until all the mixture is used up.
- Serve the pancakes warm with butter and extra honey, if desired.
