Honey, Butternut and Calvados Pancakes Recipe

Ingredients:

  1. 250g butternut squash, peeled and finely grated
  2. 1/2 cup all-purpose flour
  3. 1 tsp baking powder
  4. 1/2 tsp salt
  5. 1/4 tsp nutmeg
  6. 1/4 cup milk
  7. 2 tbsp calvados (apple brandy)
  8. 2 tbsp honey
  9. 2 eggs
  10. 2 tbsp butter, melted
  11. Extra butter for frying

Instructions:

  1. In a large mixing bowl, combine the grated butternut squash, flour, baking powder, salt and nutmeg. Mix well.
  2. In a separate mixing bowl, whisk together the milk, calvados, honey, eggs and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Heat a non-stick frying pan over medium-high heat and melt a small amount of butter in the bottom of the pan.
  5. Using a 1/4 cup measure, scoop the pancake mixture into the frying pan and cook for 2-3 minutes on each side, or until golden brown.
  6. Repeat until all the mixture is used up.
  7. Serve the pancakes warm with butter and extra honey, if desired.
