Delicious Ice Cream Sandwiches Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 quart vanilla ice cream, softened

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.
  2. In a medium bowl, combine flour, cocoa, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually blend in the dry ingredients.
  4. Spread batter evenly in prepared pan. Bake for 15 to 18 minutes, or until toothpick inserted into center comes out clean. Allow to cool.
  5. Cut into 12 equal squares. Spread about 1/2 cup ice cream onto each of 6 squares. Top each with another square, pressing gently to spread ice cream to edges. Freeze until firm.
  6. Wrap each sandwich individually in plastic wrap and freeze until ready to serve.

Serve as a sweet treat after dinner or as a cool dessert on a hot summer day. These ice cream sandwiches can also be customized by using different flavors of ice cream, adding sprinkles or nuts, or by using different types of cookies instead of brownies. Enjoy!
