Iced Pistachio Filled Biscuits – Régal Recipe

Ingredients:

  • 250g plain flour
  • 170g butter, at room temperature
  • 75g icing sugar, plus extra for dusting
  • 1 egg yolk
  • 125g shelled pistachios, finely ground
  • 150g white chocolate, chopped

Method:

  1. Preheat oven to 180°C/160°C fan/Gas 4.
  2. In a mixing bowl, beat butter with icing sugar until smooth.
  3. Add the egg yolk and mix well.
  4. Sift the flour into the bowl and add the finely ground pistachios.
  5. Mix everything well to form a dough.
  6. Cover the dough with cling film and chill it in the fridge for 30 minutes.
  7. Roll out the dough to 5 mm thickness and cut out the biscuits using a round cutter.
  8. Place the biscuits on a baking tray lined up with parchment paper and bake for 15-20 minutes, until lightly golden.
  9. Allow the biscuits to cool completely.
  10. In a double boiler, melt the white chocolate until smooth.
  11. Spread some melted chocolate on the flat side of half of the biscuits.
  12. Top each with another biscuit, flat side down, and press them together lightly.
  13. Leave the biscuits aside for several minutes to allow the chocolate to harden.
  14. Drizzle some melted chocolate over the biscuits and sprinkle with chopped pistachios.
  15. Dust with plenty of icing sugar and serve.
