Individual Mini-Pavlova with Exotic Fruits Recipe

Ingredients

  • 4 egg whites, room temperature
  • 1 cup granulated sugar
  • 1 tsp white vinegar
  • 1 tsp cornstarch
  • 1/2 cup whipped cream
  • 1/2 cup exotic fruits (such as kiwi, passion fruit, dragon fruit, and mango), chopped into small pieces

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites until they form soft peaks.
  3. Add the sugar, one tablespoon at a time, and continue beating the mixture until it forms stiff, glossy peaks.
  4. Sift in the cornstarch and add the vinegar, gently folding them into the meringue.
  5. Spoon the mixture onto the prepared baking sheet, making 6-8 small pavlovas. Use the back of the spoon to create a small well in the center of each pavlova.
  6. Bake for 1 hour or until the pavlovas are dry on the outside and slightly soft on the inside.
  7. Once the pavlovas are cooled, fill each well with whipped cream and top with chopped exotic fruits.
