Italian Meringue Recipe

Ingredients

  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 3 large egg whites, room temperature
  • 1/4 tsp cream of tartar

Instructions

  1. In a small saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring constantly until the sugar dissolves. Once boiling, reduce the heat to low and allow the mixture to simmer until it reaches 240°F on a candy thermometer.
  2. In the meantime, place the egg whites in a large mixing bowl or a stand mixer fitted with a whisk attachment. Beat the egg whites on medium-high speed until frothy. Add the cream of tartar and continue to beat until soft peaks form.
  3. Once the sugar syrup reaches 240°F, remove it from the heat. With the mixer on low speed, slowly pour the hot syrup into the egg whites, avoiding the whisk. Turn the mixer to high speed and continue beating the meringue until it has cooled and stiff peaks have formed, about 5-7 minutes.
