Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup currant jam

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, combine the flour, sugar, and salt.
  3. Cut in the butter with a pastry blender or fork until the mixture resembles coarse crumbs.
  4. Gently knead the dough until it comes together.
  5. On a lightly floured surface, roll the dough out to a 1/4 inch thickness.
  6. Using a 2-inch cookie cutter, cut out rounds and transfer them to a baking sheet lined with parchment paper.
  7. Using a 1/2 teaspoon measuring spoon, make an indentation in the center of each cookie.
  8. Fill each indentation with a small amount of currant jam.
  9. Bake for 12-15 minutes or until lightly golden brown on the edges.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
