Kouglof – Regal


Kouglof Recipe

Ingredients

  • 2 cups all-purpose flour
  • 2 1/2 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1/2 cup warm milk
  • 4 tbsp unsalted butter, melted
  • 2 eggs
  • 1/2 cup raisins
  • 1/4 cup chopped almonds
  • 1 tbsp rum (optional)
  • 1/3 cup powdered sugar

Instructions

  1. In a large mixing bowl, combine flour, yeast, sugar, and salt. Mix well.
  2. Add warm milk, butter, and eggs. Mix on low until everything is combined.
  3. Switch to a kneading attachment and knead for 10-12 minutes until the dough is smooth and elastic.
  4. Place the dough in a greased bowl and cover. Let it rest for an hour or until it has doubled in size.
  5. Add raisins, almonds, and rum to the dough. Mix well.
  6. Grease a kouglof mold with butter and sprinkle flour. Set aside.
  7. Transfer the dough to the mold and let it rest for another 30 minutes.
  8. Preheat the oven to 375°F (190°C).
  9. Bake for 30-35 minutes or until golden brown.
  10. Remove from oven and let it cool for 5 minutes before removing from the mold.
  11. Dust powdered sugar on top of the kouglof before serving.

Verdict

Kouglof is a delightful treat with a mixture of fluffy pastry and sweet raisins and almonds. The hint of rum adds an extra flavor and aroma to the kouglof. Perfect as a breakfast pastry or afternoon tea snack.
