Kouign-Amann – Regal Recipe
Ingredients:
- 1 1/4 cup all-purpose flour
- 1/2 teaspoon active dry yeast
- 1/2 teaspoon salt
- 1/2 cup water
- 225g unsalted butter, softened and divided
- 1/2 cup granulated sugar
Instructions:
- In a mixing bowl, combine flour, yeast, and salt. Mix well.
- Add water and 2 tablespoons of unsalted butter. Mix until dough comes together.
- Knead the dough for about 5 minutes until it becomes smooth and elastic.
- Cover the dough and leave it to rest for 30 minutes.
- Roll the dough out on a floured surface until it becomes a rectangle.
- Spread the remaining butter over the dough and sprinkle with granulated sugar. Fold the dough into thirds.
- Roll out the dough again and fold into thirds again. Cover and let rest for 30 minutes.
- Preheat oven to 375°F.
- Spread some sugar on a working surface. Roll out the dough to 1/4 inch thickness. Sprinkle sugar and fold the dough in half.
- Cut the dough into 3 inch squares and twist each square in opposite directions.
- Place them into muffin cups and let it rest for 1 hour.
- Bake the Kouign-Amann for 25-30 minutes, or until they turn golden brown.
- Remove from the oven and let cool for 5 minutes.
- Remove the Kouign-Amann from the muffin cups and serve.
