Kouign-Amann – Regal Recipe

Ingredients:

  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 225g unsalted butter, softened and divided
  • 1/2 cup granulated sugar

Instructions:

  1. In a mixing bowl, combine flour, yeast, and salt. Mix well.
  2. Add water and 2 tablespoons of unsalted butter. Mix until dough comes together.
  3. Knead the dough for about 5 minutes until it becomes smooth and elastic.
  4. Cover the dough and leave it to rest for 30 minutes.
  5. Roll the dough out on a floured surface until it becomes a rectangle.
  6. Spread the remaining butter over the dough and sprinkle with granulated sugar. Fold the dough into thirds.
  7. Roll out the dough again and fold into thirds again. Cover and let rest for 30 minutes.
  8. Preheat oven to 375°F.
  9. Spread some sugar on a working surface. Roll out the dough to 1/4 inch thickness. Sprinkle sugar and fold the dough in half.
  10. Cut the dough into 3 inch squares and twist each square in opposite directions.
  11. Place them into muffin cups and let it rest for 1 hour.
  12. Bake the Kouign-Amann for 25-30 minutes, or until they turn golden brown.
  13. Remove from the oven and let cool for 5 minutes.
  14. Remove the Kouign-Amann from the muffin cups and serve.
