Ingredients

  • 500g puff pastry
  • 800g ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 cups mushrooms, sliced
  • 2 cups spinach, chopped
  • 1 cup grated parmesan cheese
  • 2 eggs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 180°C.
  2. Heat the olive oil in a large pan over medium-high heat.
  3. Add the onion and garlic and sauté for 2-3 minutes until translucent.
  4. Add the ground beef and cook for 8-10 minutes until browned.
  5. Add the mushrooms and spinach and cook for 3-4 minutes until the vegetables are tender.
  6. Remove the pan from the heat and allow it to cool for 5-10 minutes.
  7. In a separate bowl, beat the eggs and mix in the parmesan cheese, salt, and black pepper.
  8. Roll out the puff pastry into a rectangular shape on a sheet of baking paper.
  9. Spread the beef mixture over the pastry, leaving a 2cm border around the edges.
  10. Pour the egg and cheese mixture over the beef mixture.
  11. Carefully fold the edges of the pastry over the filling and press them together to seal.
  12. Use a knife to cut a few slits in the top of the pastry to allow for steam to escape.
  13. Bake the torta russa for 40-45 minutes until golden brown and cooked through.

Serving Suggestions

This torta russa is best served warm, straight out of the oven. Cut into slices and serve with a side salad for a delicious and satisfying meal.
