Lamb’s Lettuce and Pear Salad with Violet Vinaigrette

Ingredients:

  • 1 big bowl of lamb’s lettuce
  • 3 ripe pears, thinly sliced
  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of chopped walnuts
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 teaspoon of dijon mustard
  • 1 tablespoon of honey
  • 1/2 tsp of edible violet petals
  • 1/4 cup of water
  • 1/2 tsp of salt and black pepper

Instructions:

  1. In a large bowl, combine lamb’s lettuce, sliced pears, and crumbled feta cheese.
  2. Take a small skillet and heat it on medium flame. Add chopped walnuts and toast them for 2- 3 minutes or until they turn golden brown while frequently stirring to avoid burning. Once toasted, let the walnuts cool down.
  3. For the dressing, In a blender, add extra virgin olive oil, balsamic vinegar, dijon mustard, honey, 1/2 tsp of salt, black pepper, and edible violet petals. Blend it all together until smooth. If the mixture seems too thick, add 1/4 cup of water and blend again until it reaches the desired consistency.
  4. Pour the vinaigrette over the salad and toss all the ingredients together. Garnish with toasted walnuts.
  5. Serve immediately or store in the refrigerator until ready to serve.
