Layer Cake: Christmas Recipe

Ingredients:

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened to room temperature
  • 4 eggs, room temperature
  • 1 cup buttermilk, room temperature
  • 2 tsp vanilla extract
  • 1/2 cup red and green sprinkles
  • 1 1/2 cups vanilla buttercream frosting

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease three 8-inch cake pans and line them with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a large bowl, using an electric mixer on medium speed, cream together butter and sugar until light and fluffy, for about 3-4 minutes. Add in the eggs one at a time beating well after each addition.

  6. Divide the batter evenly into three bowls. Add red food coloring to one bowl and green food coloring to another bowl. Leave the third bowl white. Stir until the colors are fully incorporated.
  7. Pour each color into its own prepared cake pan and smooth the tops with a spatula. Sprinkle each pan with some of the red and green sprinkles. Bake for 25-30 minutes or until an inserted toothpick comes out clean.
  8. Let the cakes cool for 10 minutes on a wire rack before inverting them onto the rack to cool completely.
  9. Once the cakes are fully cooled, level them off by slicing off any uneven tops with a serrated knife.
  10. Place a dab of frosting in the center of a serving plate or cake stand to prevent the cake from sliding. Place a red cake layer on the bottom and spread a thin layer of frosting over it. Repeat with the white and green cake layers. Spread a thin layer of frosting over the entire cake to create a “crumb coat”.
  11. Refrigerate the cake for 30 minutes, then spread another layer of frosting over the entire cake. Use a cake scraper to smooth the sides and top.
  12. Decorate the cake with additional sprinkles and Christmas decorations if desired.
