Ingredients:

  • 1 leek
  • 8 large sea scallops
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup heavy cream
  • 1/4 cup chicken or vegetable broth
  • Salt and pepper to taste

Instructions:

  1. Clean the leek by cutting off the root end and removing the dark green leaves. Cut the white and light green parts of the leek in half lengthwise and then slice crosswise into thin half-moons. Place the sliced leek in a bowl of cold water and swirl around to remove any dirt or sand. Drain and set aside.
  2. Pat the scallops dry with paper towels and season both sides with salt and pepper.
  3. Melt 1 tablespoon of butter in a large skillet over medium-high heat. When the butter is foamy, add the scallops to the pan and cook for 2 minutes per side, until golden brown and cooked through. Remove the scallops from the pan and set aside.
  4. Add the remaining tablespoon of butter to the pan and reduce the heat to medium. Add the leeks to the pan and sauté for 3-5 minutes, until softened.
  5. Add the minced garlic to the pan and cook for 1 minute, until fragrant.
  6. Pour the white wine into the pan and scrape up any browned bits from the bottom. Simmer for 1-2 minutes, until the wine has reduced by half.
  7. Add the heavy cream and chicken or vegetable broth to the pan. Bring the mixture to a simmer and cook for 2-3 minutes, until slightly thickened.
  8. Return the scallops to the pan and spoon the leek sauce over the top. Serve immediately.
