Lemon cakes and matcha tea


Lemon Cake Recipe

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup buttermilk, room temperature

Instructions:

  1. Preheat the oven to 350°F (177°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter with an electric mixer for 1-2 minutes until creamy.
  4. Add sugar and beat on medium speed for 2 minutes.
  5. Add the eggs, one at a time, beating well after each addition.
  6. Stir in lemon juice and lemon zest.
  7. Gradually add in the dry ingredients, alternating with the buttermilk. Beat until just combined.
  8. Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

This lemon cake is perfect for an afternoon tea or as a light dessert after dinner. Serve with a dollop of whipped cream and fresh berries.

Matcha Tea Recipe

Ingredients:

  • 1 teaspoon matcha green tea powder
  • 2 tablespoons hot water
  • 1 cup milk (any kind of milk works)
  • 1-2 teaspoons honey or sugar

Instructions:

  1. In a bowl, sift the matcha green tea powder to remove any clumps.
  2. Add hot water and whisk vigorously with a bamboo matcha whisk or a fork until the mixture becomes frothy. Set aside.
  3. In a small saucepan, warm the milk over medium heat until hot but not boiling.
  4. Add honey or sugar to the milk and stir until dissolved.
  5. Pour the milk into a mug and then add the frothy matcha tea mixture on top.
  6. Stir gently and enjoy.
