Lemon Madeleines: Easy Recipe
Ingredients
- 1/2 cup unsalted butter, melted and cooled
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup granulated sugar
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
Directions
- Preheat the oven to 375°F. Lightly grease a madeleine mold with butter or cooking spray.
- In a small bowl, whisk together the flour, baking powder and salt.
- In a medium bowl, whisk together the eggs, sugar, lemon zest and vanilla extract until pale yellow and fluffy.
- Add the dry ingredients to the egg mixture and whisk until just combined.
- Take the cooled melted butter and whisk it into the batter until fully incorporated.
- Spoon the batter into the prepared madeleine mold, filling each well about 3/4 full.
- Bake for 10-12 minutes or until the edges are golden brown and the centers spring back when lightly pressed.
- Remove from the oven and allow the madeleines to cool for 2-3 minutes in the mold.
- Use a butter knife or a small offset spatula to gently loosen the madeleines from the pan, and then transfer them to a wire rack to cool completely.
