Lemon Madeleines: Easy Recipe

Ingredients

  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat the oven to 375°F. Lightly grease a madeleine mold with butter or cooking spray.
  2. In a small bowl, whisk together the flour, baking powder and salt.
  3. In a medium bowl, whisk together the eggs, sugar, lemon zest and vanilla extract until pale yellow and fluffy.
  4. Add the dry ingredients to the egg mixture and whisk until just combined.
  5. Take the cooled melted butter and whisk it into the batter until fully incorporated.
  6. Spoon the batter into the prepared madeleine mold, filling each well about 3/4 full.
  7. Bake for 10-12 minutes or until the edges are golden brown and the centers spring back when lightly pressed.
  8. Remove from the oven and allow the madeleines to cool for 2-3 minutes in the mold.
  9. Use a butter knife or a small offset spatula to gently loosen the madeleines from the pan, and then transfer them to a wire rack to cool completely.
  10. Serve and enjoy!
