Lemon Marzipan Truffles

Ingredients:

  • 1/2 cup marzipan
  • 1/4 cup powdered sugar
  • 1/4 cup heavy cream
  • zest of 1 lemon
  • 1/2 tsp vanilla extract
  • 1 cup white chocolate chips
  • 1/4 cup lemon juice
  • 1/2 cup chopped almonds

Instructions:

  1. In a large mixing bowl, combine marzipan, powdered sugar, heavy cream, lemon zest and vanilla extract and mix well.
  2. Using a small scooper or spoon, form small balls and place them onto a baking sheet lined with parchment paper. Place sheet in refrigerator for 10-15 minutes to firm up.
  3. Meanwhile, in a microwave safe bowl, melt the white chocolate chips in 30 second increments, stirring until fully melted.
  4. Add lemon juice to the melted chocolate and stir well.
  5. Dip marzipan balls into the melted chocolate mixture and place back onto the parchment-lined baking sheet.
  6. Before the chocolate coating sets, sprinkle chopped almonds on top of each truffle.
  7. Place back into the refrigerator to set for an additional 10-15 minutes.
  8. Once set, remove truffles from the baking sheet and store in an airtight container in the refrigerator.
