Lemon Marzipan Truffles
Ingredients:
- 1/2 cup marzipan
- 1/4 cup powdered sugar
- 1/4 cup heavy cream
- zest of 1 lemon
- 1/2 tsp vanilla extract
- 1 cup white chocolate chips
- 1/4 cup lemon juice
- 1/2 cup chopped almonds
Instructions:
- In a large mixing bowl, combine marzipan, powdered sugar, heavy cream, lemon zest and vanilla extract and mix well.
- Using a small scooper or spoon, form small balls and place them onto a baking sheet lined with parchment paper. Place sheet in refrigerator for 10-15 minutes to firm up.
- Meanwhile, in a microwave safe bowl, melt the white chocolate chips in 30 second increments, stirring until fully melted.
- Add lemon juice to the melted chocolate and stir well.
- Dip marzipan balls into the melted chocolate mixture and place back onto the parchment-lined baking sheet.
- Before the chocolate coating sets, sprinkle chopped almonds on top of each truffle.
- Place back into the refrigerator to set for an additional 10-15 minutes.
- Once set, remove truffles from the baking sheet and store in an airtight container in the refrigerator.
