Lemon Meringue Pudding Recipe

Ingredients

  • 1 ½ cups of graham cracker crumbs
  • 6 tablespoons of unsalted butter, melted
  • 1 tablespoon of granulated sugar
  • 1 can of sweetened condensed milk
  • Zest of 3 lemons
  • ½ cup of fresh lemon juice
  • 3 egg yolks
  • 3 egg whites
  • ¼ teaspoon of cream of tartar
  • ⅔ cup of granulated sugar

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, mix the graham cracker crumbs, unsalted butter, and one tablespoon of granulated sugar.
  3. Press the mixture onto the bottom and sides of a 9-inch (23cm) pie dish. Bake for 10-12 minutes, then remove from the oven and let it cool down.
  4. In another bowl, whisk together the sweetened condensed milk, lemon zest, lemon juice, and egg yolks.
  5. Pour the mixture into the cooled-down crust and bake for another 15-17 minutes.
  6. In a separate bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add in the ⅔ cup of granulated sugar and continue to beat until stiff peaks form.
  7. Spoon the meringue over the pudding and spread it out to the edges so that it seals the filling in completely. Create swirls and peaks using the back of your spoon.
  8. Put back the pie dish in the oven for another 10-15 minutes or until the meringue is golden brown.
  9. Cool the pie on a wire rack, making sure it comes down to room temperature before serving.
