Lettuce Paupiette with Herbs and Grilled Corn

Ingredients

  • 4 leaves of iceberg lettuce
  • 2 ears of corn, grilled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh chives, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Directions

  1. Preheat your grill to medium-high heat.
  2. Cut the corn off the cob and grill until slightly charred.
  3. Mix together the chopped parsley, cilantro, and chives.
