Ingredients

  • 1 cup chopped peeled and pitted ripe peaches
  • 1 cup chopped peeled and pitted ripe apricots
  • 1/2 cup white sugar
  • 1 tbsp fresh lemon juice

Instructions

  1. In a large pot, add the chopped peaches and apricots. Turn the heat up to medium-high and cook for 5 to10 minutes until the fruit is softened.
  2. Add the sugar and lemon juice to the pot and stir well.
  3. Reduce the heat to medium low and continue cooking the mixture for about 20-30 minutes, stirring occasionally until the mixture thickens
  4. To test if the jam has reached the desired thickness, put a small spoonful on a cold plate and let it cool. If it has a jelly-like consistency, then it is ready. If it is still runny, keep cooking and checking every 5 minutes until it thickens.
  5. Remove the pot from the heat and let it cool for a few minutes.
  6. Pour the jam into clean and sterilized jars and then leave them to cool. Seal the jars and keep them in the fridge
