Lime and Frozen Mojito Mini-Tartlets Recipe
Ingredients:
- 1 ready-made pie crust dough
- 1/4 cup freshly squeezed lime juice
- 1/4 cup white rum
- 1/4 cup fresh mint leaves, finely chopped
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1/4 cup water
- 1/2 cup crushed ice
Instructions:
- Preheat the oven to 375°F (190°C).
- Roll the pie crust dough out on a floured surface and use a cookie cutter to cut out small circles to fit your mini tartlet molds. Place them inside the molds and press the dough up the sides of each mold.
- Bake the crust until they are golden brown, for about 10 to 12 minutes. Once they’re done, remove from oven and allow to cool completely.
- In a bowl, whisk together the lime juice, rum, and chopped mint leaves. Set aside.
- In a saucepan, combine the sugar and water. Cook over high heat until the sugar has dissolved. Remove from heat and let it cool.
- In a blender, mix the cooled sugar syrup with the crushed ice until smooth.
- On another bowl, whip the cream until stiff. Add the lime mixture in and mix well.
- Add in the frozen syrup and mix until well incorporated.
- Scoop the mixture into each mini tartlet bottom and freeze until firm.
