Linzer Cookies with Cherry Jam: Vegan Recipe

Ingredients:

  • 1 cup vegan butter, softened
  • 1 cup granulated sugar
  • 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water)
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cherry jam
  • Powdered sugar, for dusting

Instructions:

  1. In a large mixing bowl, cream together the vegan butter and granulated sugar until light and fluffy.
  2. Add in the flax eggs and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the flour mixture to the butter mixture in small batches, stirring until incorporated.
  5. Divide the dough in half and wrap each half in plastic wrap. Chill for at least 30 minutes, or up to 2 days.
  6. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  7. Roll out one half of the dough on a lightly floured surface to a thickness of about 1/4″.
  8. Using a 2″ round cookie cutter, cut out circles of dough and place them on the prepared baking sheets.
  9. Repeat the process with the remaining half of the dough, this time using a smaller cookie cutter to cut out the centers of the rounds.
  10. Bake both sets of cookies for 8-10 minutes, or until the edges are lightly golden brown. Allow to cool completely.
  11. To assemble the cookies, spoon about 1 teaspoon of cherry jam onto the whole circles and spread it evenly.
  12. Gently place the cut-out cookies on top of the jam, dust with powdered sugar and serve.
