Linzer Cookies with Cherry Jam: Vegan Recipe
Ingredients:
- 1 cup vegan butter, softened
- 1 cup granulated sugar
- 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water)
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup cherry jam
- Powdered sugar, for dusting
Instructions:
- In a large mixing bowl, cream together the vegan butter and granulated sugar until light and fluffy.
- Add in the flax eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the flour mixture to the butter mixture in small batches, stirring until incorporated.
- Divide the dough in half and wrap each half in plastic wrap. Chill for at least 30 minutes, or up to 2 days.
- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- Roll out one half of the dough on a lightly floured surface to a thickness of about 1/4″.
- Using a 2″ round cookie cutter, cut out circles of dough and place them on the prepared baking sheets.
- Repeat the process with the remaining half of the dough, this time using a smaller cookie cutter to cut out the centers of the rounds.
- Bake both sets of cookies for 8-10 minutes, or until the edges are lightly golden brown. Allow to cool completely.
- To assemble the cookies, spoon about 1 teaspoon of cherry jam onto the whole circles and spread it evenly.
- Gently place the cut-out cookies on top of the jam, dust with powdered sugar and serve.
