Livarot in Foam, Figs and Cider Granita Recipe

Ingredients

  • 300g Livarot cheese
  • 200ml heavy cream
  • 4 fresh figs
  • 150g sugar
  • 300ml cider
  • 1 lemon

Instructions

For the Livarot Foam

  1. Start by slicing the Livarot cheese into thin pieces.
  2. Add the sliced Livarot cheese and heavy cream into a blender and blend until smooth and creamy.
  3. Pour the mixture through a fine mesh strainer to remove any lumps.
  4. Pour the Livarot foam into a cream whipper and load with one cream charger cartridge.
  5. Refrigerate until required.

For the Figs

  1. Cut the fresh figs in half and place them on a baking tray.
  2. Sprinkle with sugar and place under the grill until the sugar caramelises and the figs soften.
  3. Once they are done, remove from the grill and let them cool.

For the Cider Granita

  1. Add the sugar, lemon juice and cider to a saucepan and bring to a boil.
  2. Reduce heat and let the mixture simmer for about 15 minutes.
  3. Once the mixture has reduced to a syrupy consistency, pour it into a shallow container and freeze.
  4. After 30 minutes, use a fork to scrape and fluff up the mixture, continuing every 15 minutes until it has turned into granita.

Serving Suggestions

  1. Place the fig halves on a plate.
  2. Top with a generous portion of Livarot foam.
  3. Spoon some cider granita over the top of the foam and serve immediately.
  4. Enjoy this unique and flavourful dish as an appetizer or dessert.
