Lobster Nem with Mango Sauce Recipe
Ingredients:
- 1 1/2 cups of cooked lobster meat
- 1/2 cup of thinly sliced carrots
- 1/2 cup of thinly sliced cucumber
- 1/2 cup of thinly sliced red onion
- 1/2 cup of thinly sliced cilantro
- 12 rice paper rounds
- 1/2 cup of mango puree
- 2 tablespoons of rice vinegar
- 2 teaspoons of sugar
- 1 tablespoon of fish sauce
- 1 teaspoon of sriracha
Instructions:
- Prepare all of the ingredients as directed above and set them aside.
- In a small bowl, whisk together the mango puree, rice vinegar, sugar, fish sauce, and sriracha until blended. Set aside for later use.
- Fill a large bowl with warm water and dip one of the rice paper rounds into the water for roughly 10-15 seconds, or until it becomes pliable and soft.
- Remove the rice paper from the water and lay it flat on a clean surface.
- Add some sliced carrots, cucumber, red onion, cilantro, and cooked lobster to the center of the rice paper.
- Gently fold up the bottom half of the rice paper over the filling and tuck it tightly underneath the ingredients.
- Next, fold the sides of the rice paper toward the center and continue to roll the rice paper tightly until you get a neat and compact roll.
- Repeat the process with the remaining rice paper rounds and ingredients.
- Once you have finished rolling all of the rice paper rounds, serve them alongside the mango sauce.
- Dip the lobster nem into the mango sauce, and enjoy!
