Lobster Nem with Mango Sauce Recipe

Ingredients:

  • 1 1/2 cups of cooked lobster meat
  • 1/2 cup of thinly sliced carrots
  • 1/2 cup of thinly sliced cucumber
  • 1/2 cup of thinly sliced red onion
  • 1/2 cup of thinly sliced cilantro
  • 12 rice paper rounds
  • 1/2 cup of mango puree
  • 2 tablespoons of rice vinegar
  • 2 teaspoons of sugar
  • 1 tablespoon of fish sauce
  • 1 teaspoon of sriracha

Instructions:

  1. Prepare all of the ingredients as directed above and set them aside.
  2. In a small bowl, whisk together the mango puree, rice vinegar, sugar, fish sauce, and sriracha until blended. Set aside for later use.
  3. Fill a large bowl with warm water and dip one of the rice paper rounds into the water for roughly 10-15 seconds, or until it becomes pliable and soft.
  4. Remove the rice paper from the water and lay it flat on a clean surface.
  5. Add some sliced carrots, cucumber, red onion, cilantro, and cooked lobster to the center of the rice paper.
  6. Gently fold up the bottom half of the rice paper over the filling and tuck it tightly underneath the ingredients.
  7. Next, fold the sides of the rice paper toward the center and continue to roll the rice paper tightly until you get a neat and compact roll.
  8. Repeat the process with the remaining rice paper rounds and ingredients.
  9. Once you have finished rolling all of the rice paper rounds, serve them alongside the mango sauce.
  10. Dip the lobster nem into the mango sauce, and enjoy!
