Lobster with New Leeks and Onion Butter Recipe

Ingredients:

  • 1 lb lobster tail
  • 2 large leeks
  • 1/2 cup unsalted butter
  • 1/2 yellow onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions:

  1. Cut the leeks into thin rounds and wash them thoroughly in cold water. Drain and set them aside.
  2. Using kitchen scissor, cut the lobster tail on both the sides of the membrane, and carefully remove the shell. Gently remove the lobster meat and slice into bite-sized pieces. Keep it aside.
  3. In a skillet over medium heat, melt the butter. Add the onion and garlic and cook, stirring occasionally, until the onion softens and turns translucent, for about 3-4 minutes.
  4. Add the leeks, cayenne pepper, and salt and pepper to taste. Cook, stirring occasionally, until the leeks are tender, for about 5-7 minutes.
  5. Now, add the sliced lobster to the skillet and cook until the lobster is heated through, for about 2-3 minutes. Toss to combine the ingredients.
  6. Once the lobster is cooked, divide the mixture among 4 serving plates, and drizzle the remaining butter sauce over the mixture.
  7. Serve hot with a side salad or steamed vegetables.
