Ingredients:

  • 1 (3-4 pound) boneless prime rib roast
  • 1 tablespoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 fresh thyme sprigs
  • 8 garlic cloves

Instructions:

  1. Preheat oven to 450°F.
  2. Trim the rib roast to tie cleanly against your round, then season all over with kosher salt, black pepper, garlic powder, and onion powder.
  3. Heat a skillet or Dutch oven over medium-high heat. Add olive oil and butter and heat until the butter is melted.
  4. Add the beef to the skillet and sear on all sides until the outside is browned, about 2-3 minutes per side. Remove from heat.
  5. Add the thyme sprigs and whole garlic cloves to the skillet and place the skillet in the preheated oven.
  6. Roast for 15 minutes, then reduce the oven temperature to 325°F and continue to roast until the internal temperature of the roast reaches 130°F for medium-rare, checking the temperature with a meat thermometer at regular intervals.
  7. Remove from the oven when done and let the roast rest for 15-20 minutes before slicing and serving.
