Lost Gingerbread – Treat Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar, for rolling the cookie dough

Instructions:

  1. In a medium-sized bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  2. In a large bowl, using an electric mixer, beat together butter and brown sugar until light and fluffy, about 2 minutes. Add an egg and beat until fully incorporated. Add molasses and vanilla extract, continue beating until well combined.
  3. Add the dry ingredients mixture to the large bowl by mixing it slowly into the butter mixture, until it’s well combined. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. Using a tablespoon or cookie scoop, scoop out the dough and roll it into balls. Roll the dough balls in granulated sugar, until evenly coated. Place them on the baking sheets about 2 inches apart.
  6. Bake for 12-15 minutes, or until the edges are firm yet soft to the touch. Once the cookies are done, remove them from the oven and let cool on the baking sheet for 5 minutes.
  7. Transfer the cookies to a wire rack so that they can cool completely before serving.
