Mackerel Riso Pasta Salad Recipe

Ingredients

  • 1 cup of riso pasta
  • 1 can of mackerel (in olive oil)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup of chopped fresh parsley
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 1 tablespoon of honey
  • Salt and pepper to taste

Instructions

  1. Boil the riso pasta in a pot of salted water, following the instructions on the package. Once the pasta is cooked, rinse it under cold water and set it aside.
  2. Drain the mackerel from the can and add it to a large mixing bowl. Flake it with a fork.
  3. Add the diced red bell pepper, diced red onion and chopped fresh parsley to the mixing bowl with the mackerel and stir together.
  4. In a small glass, whisk together olive oil, lemon juice, honey, salt and pepper.
  5. Pour the dressing over the mackerel and vegetables and toss until everything is coated in the vinaigrette.
  6. Finally, add the cooled riso pasta to the mixing bowl and gently toss until everything is mixed together.
  7. Let the salad chill in the refrigerator for at least 30 minutes before serving.
