Mackerel Riso Pasta Salad Recipe
Ingredients
- 1 cup of riso pasta
- 1 can of mackerel (in olive oil)
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup of chopped fresh parsley
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 1 tablespoon of honey
- Salt and pepper to taste
Instructions
- Boil the riso pasta in a pot of salted water, following the instructions on the package. Once the pasta is cooked, rinse it under cold water and set it aside.
- Drain the mackerel from the can and add it to a large mixing bowl. Flake it with a fork.
- Add the diced red bell pepper, diced red onion and chopped fresh parsley to the mixing bowl with the mackerel and stir together.
- In a small glass, whisk together olive oil, lemon juice, honey, salt and pepper.
- Pour the dressing over the mackerel and vegetables and toss until everything is coated in the vinaigrette.
- Finally, add the cooled riso pasta to the mixing bowl and gently toss until everything is mixed together.
- Let the salad chill in the refrigerator for at least 30 minutes before serving.
