Mackerel stuffed with brandade Recipe

Ingredients:

  • 4 fresh mackerel, scaled and gutted
  • 200g brandade (salt cod mashed with olive oil and garlic)
  • 2 tbsp olive oil
  • 1 lemon, sliced into rounds
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 200°C/ 400°F/Gas Mark 6.
  2. Cut the head and tail off the mackerel and slice open the belly to remove the bones.
  3. Divide the brandade mixture evenly amongst the four mackerel, pressing it down firmly into each fish
  4. Place each stuffed mackerel onto an oiled baking dish.
  5. Rub the remaining olive oil over the skin of the mackerel, season with salt and pepper and top each fish with two lemon rounds.
  6. Bake for around 15-20 minutes, or until the mackerel is cooked through and the flesh is flaky.
  7. Serve hot with a side salad and lemon wedges.
