Mackerel stuffed with brandade Recipe
Ingredients:
- 4 fresh mackerel, scaled and gutted
- 200g brandade (salt cod mashed with olive oil and garlic)
- 2 tbsp olive oil
- 1 lemon, sliced into rounds
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 200°C/ 400°F/Gas Mark 6.
- Cut the head and tail off the mackerel and slice open the belly to remove the bones.
- Divide the brandade mixture evenly amongst the four mackerel, pressing it down firmly into each fish
- Place each stuffed mackerel onto an oiled baking dish.
- Rub the remaining olive oil over the skin of the mackerel, season with salt and pepper and top each fish with two lemon rounds.
- Bake for around 15-20 minutes, or until the mackerel is cooked through and the flesh is flaky.
- Serve hot with a side salad and lemon wedges.
