Madeleines with Two Flavors

Ingredients:

  • 3 eggs
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon orange zest

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Grease a madeleine pan with butter or cooking spray.
  3. In a small bowl, combine the flour and baking powder.
  4. In a medium bowl, beat the eggs and sugar until light and fluffy.
  5. Add the melted butter, vanilla extract, salt, and lemon zest to the egg mixture and mix well.
  6. Add the flour mixture to the egg mixture and stir until just combined.
  7. Divide the batter into two portions.
  8. Add the orange zest to one portion and mix well.
  9. Add the remaining batter to the other portion and mix well.
  10. Spoon the batter into the madeleine pan, filling each shell about 3/4 full.
  11. Bake for 10-12 minutes, or until the madeleines are lightly browned around the edges and have a slight hump in the center.
  12. Remove from the oven and cool for 5 minutes in the pan.
  13. Remove the madeleines from the pan and cool on a wire rack.
  14. Serve warm or at room temperature.
