Mamouniyé – Regal Recipe
Ingredients:
- 1 1/2 cups fine semolina
- 1/2 cup unsalted butter, melted
- 1/2 cup sugar
- 3 cups whole milk
- 1/4 tsp orange blossom water
- 1/2 cup blanched and slivered almonds
- 1/2 cup pistachios
- 1/4 cup rose petals, chopped
Instructions:
- Preheat the oven to 375°F (190°C).
- Spread the semolina in an even layer on a baking sheet and toast in the oven for about 8-10 minutes, stirring occasionally, until lightly golden. Remove from the oven and let cool.
- In a medium bowl, mix together the melted butter and sugar until the sugar dissolves. Add the toasted semolina and mix well.
- In a medium saucepan, heat the milk over medium-high heat until it comes to a simmer. Add the orange blossom water and stir to combine.
- Slowly pour the semolina mixture into the milk, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan, about 10-15 minutes.
- Remove the pan from the heat and stir in the almonds and pistachios. Transfer the mixture to a serving dish and sprinkle the chopped rose petals over the top.
- Cover the dish with plastic wrap and chill in the refrigerator for at least 1 hour, or until firm. Serve chilled.
