Mamouniyé – Regal Recipe

Ingredients:

  • 1 1/2 cups fine semolina
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar
  • 3 cups whole milk
  • 1/4 tsp orange blossom water
  • 1/2 cup blanched and slivered almonds
  • 1/2 cup pistachios
  • 1/4 cup rose petals, chopped

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Spread the semolina in an even layer on a baking sheet and toast in the oven for about 8-10 minutes, stirring occasionally, until lightly golden. Remove from the oven and let cool.
  3. In a medium bowl, mix together the melted butter and sugar until the sugar dissolves. Add the toasted semolina and mix well.
  4. In a medium saucepan, heat the milk over medium-high heat until it comes to a simmer. Add the orange blossom water and stir to combine.
  5. Slowly pour the semolina mixture into the milk, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan, about 10-15 minutes.
  6. Remove the pan from the heat and stir in the almonds and pistachios. Transfer the mixture to a serving dish and sprinkle the chopped rose petals over the top.
  7. Cover the dish with plastic wrap and chill in the refrigerator for at least 1 hour, or until firm. Serve chilled.
