Mandarin Pancakes from Michèle

Ingredients:

  • 2 cups flour
  • 1/2 cup boiling water
  • 1/2 cup cold water
  • 2 tablespoons vegetable oil

Instructions:

  1. In a large mixing bowl, add flour and slowly pour in the boiling water. Mix with a fork until the mixture looks lumpy. Add cold water and continue mixing until a smooth dough forms.
  2. On a floured surface, knead the dough for 10 minutes until it becomes elastic. Cover it with a damp cloth and let it rest for about 30 minutes.
  3. Divide the dough into golf-sized balls. On a floured surface, roll each ball into a thin circle (about 6 inches in diameter).
  4. Using a pastry brush, brush each pancake with vegetable oil, and lay another pancake on top. This will give the pancakes a bit of flakiness. Repeat until all the pancakes are stacked with oil brushed in between.
  5. Using a rolling pin, gently roll the stack of pancakes until it forms a thin and even circle.
  6. Heat a non-stick skillet over medium heat. Cook the pancake one at a time, until golden brown on both sides (about 2 minutes per side).
  7. Gently separate the pancakes and serve them warm with your choice of filling. Traditionally, Mandarin pancakes are served with Peking duck, but they can also be filled with other meats, vegetables or sauces.
