Mango Marshmallows: Gourmet Recipe
Ingredients:
- 2 cups mango puree
- 2 cups granulated sugar
- 1 1/2 cups water
- 3 envelopes unflavored gelatin
- 1/4 teaspoon salt
- 1/2 cup cornstarch
- 1/2 cup powdered sugar
Directions:
- Prepare a 9×13 inch baking dish by spraying it with non-stick cooking spray and coating it with a mixture of cornstarch and powdered sugar.
- In a large bowl, add 1 cup of mango puree and sprinkle gelatin on top. Allow it to bloom for about 5 minutes.
- In a medium saucepan, combine the remaining 1 cup of mango puree, sugar, water, and salt. Cook over medium heat and stir until the sugar has completely dissolved.
- Using a candy thermometer, heat the mixture until it reaches 240°F. Be sure to stir occasionally to prevent the mixture from burning.
- Slowly pour the hot mixture into the gelatin mixture, while whisking constantly.
- Using an electric mixer on high speed, beat the mixture until it has tripled in volume and is thick and shiny. This may take about 10-15 minutes.
- Pour the mixture into the prepared baking dish and smooth the top with a rubber spatula. Allow it to sit at room temperature and set for at least 6 hours or overnight.
- Dust a cutting board with the cornstarch and powdered sugar mixture. Gently release the marshmallows from the baking dish and place them onto the cutting board.
- Using a sharp knife, cut the marshmallows into bite-sized pieces.
- Toss each piece into the cornstarch and powdered sugar mixture to prevent them from sticking together.
- Enjoy the delicious and fruity taste of the Mango Marshmallows!
