Ingredients:

  • 2 cups mango puree
  • 2 cups granulated sugar
  • 1 1/2 cups water
  • 3 envelopes unflavored gelatin

Directions:

  1. Prepare a 9×13 inch baking dish by spraying it with non-stick cooking spray and coating it with a mixture of cornstarch and powdered sugar.
  2. In a large bowl, add 1 cup of mango puree and sprinkle gelatin on top. Allow it to bloom for about 5 minutes.
  3. In a medium saucepan, combine the remaining 1 cup of mango puree, sugar, water, and salt. Cook over medium heat and stir until the sugar has completely dissolved.
  4. Using a candy thermometer, heat the mixture until it reaches 240°F. Be sure to stir occasionally to prevent the mixture from burning.
  5. Slowly pour the hot mixture into the gelatin mixture, while whisking constantly.
  6. Using an electric mixer on high speed, beat the mixture until it has tripled in volume and is thick and shiny. This may take about 10-15 minutes.
  7. Pour the mixture into the prepared baking dish and smooth the top with a rubber spatula. Allow it to sit at room temperature and set for at least 6 hours or overnight.
  8. Dust a cutting board with the cornstarch and powdered sugar mixture. Gently release the marshmallows from the baking dish and place them onto the cutting board.
  9. Using a sharp knife, cut the marshmallows into bite-sized pieces.
  10. Toss each piece into the cornstarch and powdered sugar mixture to prevent them from sticking together.
