Ingredients:

  • 4 Egg whites
  • 1 cup Caster sugar
  • 1 tsp White vinegar
  • 1 tsp Cornflour
  • 1 cup Whipping cream
  • 2 Ripe mangoes, sliced
  • 1 tbsp Icing sugar

Directions:

  1. Preheat oven to 120°C. Line a baking tray with paper.
  2. In a bowl, beat egg whites until stiff peaks form.
  3. Add caster sugar, one tablespoon at a time, beating until meringue is thick and glossy.
  4. Fold in vinegar and cornflour.
  5. Scoop the meringue onto the prepared tray to form a round shape, leaving a small well at the centre.
  6. Bake in the preheated oven for 1 hour or until dry and crisp.
  7. Turn off the oven and leave the pavlova to cool completely inside the oven.
  8. In a separate bowl, whisk the cream until it forms soft peaks.
  9. Spread the whipped cream over the cooled pavlova.
  10. Top with sliced mangoes and sprinkle with icing sugar.
  11. Serve in slices and enjoy the festive dessert.
