Mango Pavlova
Ingredients:
- 4 Egg whites
- 1 cup Caster sugar
- 1 tsp White vinegar
- 1 tsp Cornflour
- 1 cup Whipping cream
- 2 Ripe mangoes, sliced
- 1 tbsp Icing sugar
Directions:
- Preheat oven to 120°C. Line a baking tray with paper.
- In a bowl, beat egg whites until stiff peaks form.
- Add caster sugar, one tablespoon at a time, beating until meringue is thick and glossy.
- Fold in vinegar and cornflour.
- Scoop the meringue onto the prepared tray to form a round shape, leaving a small well at the centre.
- Bake in the preheated oven for 1 hour or until dry and crisp.
- Turn off the oven and leave the pavlova to cool completely inside the oven.
- In a separate bowl, whisk the cream until it forms soft peaks.
- Spread the whipped cream over the cooled pavlova.
- Top with sliced mangoes and sprinkle with icing sugar.
- Serve in slices and enjoy the festive dessert.
