Mangoes and Marinated Prawns Recipe

Ingredients:

  • 1 pound large prawns, peeled and deveined
  • 2 ripe mangoes, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. In a small bowl, whisk together the olive oil, lime juice, honey, cumin, chili powder, and garlic powder. Season with salt and pepper to taste.
  2. In a large bowl, mix together the prawns and half of the marinade. Cover and refrigerate for at least 30 minutes.
  3. Heat a large skillet over medium-high heat. Add the prawns to the skillet and cook for about 2-3 minutes on each side, until they turn pink and are cooked through. Remove from heat and let cool slightly.
