Marinated Fresh Salmon, Rattes, Black Radish and Green Whipped Cream Recipe

Ingredients:

  • 4 fresh salmon fillets
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound rattes (small yellow potatoes)
  • 2 black radishes, thinly sliced
  • 1/2 cup heavy cream
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 4 green onions, thinly sliced

Instructions:

  1. In a large bowl, whisk together the olive oil, apple cider vinegar, honey, dijon mustard, garlic powder, onion powder, salt, and black pepper. Add the salmon fillets and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the marinated salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until cooked through
  3. While the salmon is cooking, wash and slice the rattes and boil them in salted water for 15-20 minutes, or until tender. Drain and set aside.
  4. In a small bowl, make the green whipped cream by whisking together the heavy cream, basil leaves, parsley leaves, and green onions until soft peaks form.
  5. Arrange the cooked rattes and sliced black radishes on a platter. Top with the baked salmon fillets. Serve the green whipped cream on the side.

Verdict:

This recipe is the perfect combination of salty, savory, and fresh flavors. The marinated salmon is tender and flavorful, while the cooked rattes and sliced black radishes provide a satisfying crunch.
