Ingredients

  • 4 mackerel fillets
  • 1 red chili, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 can coconut milk
  • 2 cups chicken or vegetable broth
  • 1 lemongrass stalk, chopped
  • 2 kaffir lime leaves, torn
  • 1 small piece ginger, sliced
  • 1 tablespoon cooking oil
  • Salt and black pepper to taste
  • Cilantro leaves for garnish

Instructions

  1. First, prepare the marinade by mixing together chili, garlic, soy sauce, honey, lime juice, fish sauce, salt, and black pepper in a bowl. Coat the mackerel fillets with the marinade and set aside for at least 20 minutes.
  2. Heat cooking oil in a pot over medium heat. Add lemongrass, kaffir lime leaves, and ginger and sauté for a minute until fragrant.
