Marinated Scallops with Citrus Ginger Vinaigrette

Ingredients:

  • 1 lb fresh scallops, cleaned and trimmed
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 lime, juiced
  • 1 tbsp orange zest
  • 1 tbsp fresh cilantro, chopped

Instructions:

  1. In a large bowl, whisk together the olive oil, soy sauce, honey, minced garlic, grated ginger, lime juice and orange zest.
  2. Add the scallops to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 4 hours).
